Lemon Herb Roasted Chicken Thighs

A foolproof way to get crispy, juicy chicken every time!

Ingredients:

  • 4 bone-in, skin-on chicken thighs

  • 2 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp garlic powder

  • 1 tsp dried oregano

  • 1 lemon, sliced

  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions:
1️⃣ Preheat your oven to 400°F (200°C).
2️⃣ Pat the chicken thighs dry with paper towels (this helps them get crispy!).
3️⃣ In a small bowl, mix salt, pepper, garlic powder, and oregano. Rub this seasoning all over the chicken.
4️⃣ Heat olive oil in an oven-safe skillet over medium heat. Sear chicken, skin side down, for 5 minutes until golden brown.
5️⃣ Flip the chicken, add lemon slices to the pan, and transfer to the oven.
6️⃣ Bake for 20-25 minutes or until internal temperature reaches 165°F (75°C).
7️⃣ Let rest for 5 minutes, then sprinkle with fresh parsley before serving.
